How to Dice an Eggplant
You can use this technique to cut eggplant into cubes for any number of recipes, including soups and sauces. Slicing eggplant is an easy process, but to properly chop eggplant, you need to have a sharp knife and cutting board on hand.
>>> Rinse the eggplant under running water.
You want to remove any dirt and grime that the eggplant received on its long journey from the fields to your kitchen.
>>> Cut off the stem and discard it, and cut the body of the eggplant in half.
>>> Cut the eggplant on a cutting board.
Cut the eggplant in half lengthwise, parallel to the cutting board.
Make sure your knife is sharp!
>> Cut half of the eggplant into longitudinal strips, perpendicular to the cutting board.
Hold the strips with your free hand to keep strip sizes uniform.
>>> Cut the eggplant slices at a 90-degree angle.
Cut the other half in the same way, and the eggplant has been cut into cubes!
