How to Increase Your Vegetable Intake
If you’re hoping to lose weight this year, you probably already know that one easy way to achieve this goal is to increase the amount of fruits and vegetables you eat. Vegetables are low in calories and rich in nutrients. If you’re looking for ways to increase your vegetable intake, try these delicious ideas:
1. Stack a sandwich high with lettuce, tomatoes, and vegetables.
2. Start each meal with a salad: a mix of dark green varieties of lettuce and colorful vegetables, with a little low-calorie dressing.
3. When you need a snack, eat cherry tomatoes, celery, or sliced sweet peppers. Many supermarkets carry small packets of celery or carrot sticks in their product sections. They make a good lunch box (or bag) of snacks for kids of all ages.
4. Top the pasta with steamed broccoli, carrots and other vegetables and top with a little Parmesan cheese to make the primavera dough. Or add finely chopped greens — such as carrots, onions, cooked eggplant, squash, or chopped spinach — to your pasta sauce.
5. Put a can of veggies or tomato juice in your bag for quick cash (and a serving of veggies to boot!).
6. Put on top of the baked potatoes a thick vegetable sauce or fried vegetables.
